Arctic char crudo, samphire, lovage cream

Roasted scallop, orange parsnip puree, squid ink shortbread, bone marrow and coral emulsion

Veal tenderloin, crispy potato roll, salsify puree, celery cannelloni with forgotten vegetables and caramelized chestnuts, Albufera sauce

Truffle-infused Brie, apple chutney, fruit bread
